A village pizzeria, on the square. For more than twenty years the oven has stayed lit from the afternoon and the queue forms under the arcades of Rufina. Good flour, time, and the oven always lit — pizza to take home still hot.

Our flours

Great pizza begins long before the oven. For us it begins with the flour and with time: doughs with lunga lievitazione, and alongside the usual wheat we work with ancient grains — kamut and spelt. More time, easier to digest, a taste you can feel.

  2. 02 Long rise — the dough rests, no rush.
  3. 03 Baked in the oven — thin, fragrant, to take away hot.
